  • Garlic Powder – 1 Teaspoon
  • White Pepper – 1 Teaspoon
  • Fresh Parsley – 4 Sprigs
  • Fresh Sage- 4 Sprigs
  • Fresh Rosemary – 4 Sprigs
  • Fresh Thyme – 4 Sprigs
  • Unsalted Butter – 2 Tablespoons
  • Water – 1 Cup

Preparation:

  1. Preheat oven to 210°C.
  2. Use a few fingers to loosen the skin on the turkey breast and drumsticks. Rub the seasonings on the meat under the skin. Place parsley, sage, rosemary, and thyme sprigs between skin and meat.
  3. Place the meat thermometer over the meaty part of the drumstick, without touching the bones.

Directions:

  1. Coat the turkey with the melted butter and place the turkey, breast side up on a rack in a roasting pan. Cover loosely with aluminum foil. Cook for 30 minutes, then reduce the temperature to 160°C.
  2. Begin adding water and basting the turkey with pan juices every 15 to 20 minutes. In the last 30 minutes, remove the foil from the baking sheet. Cook for 3 to 4 hours until the solution reaches 80°C on a meat thermometer.
